Meet our newest Road Dog:

Quite a few Flying Dog mutts have culinary backgrounds. And when their love for food and beer come together, the result is (usually) pretty damn tasty.

Brewer and cellarman Larry Pomerantz recently developed his own take on fish and chips, inspired by our 20th anniversary Raging Bitch:

Bitch and Chips

Serves 13 (6 oz. portions)

Ingredients:

• 6 cups flour
• 3 tablespoons baking powder
• 1 tablespoon kosher salt
• 1 teaspoon cayenne pepper
• 1 teaspoon Old Bay Seasoning
• 36 oz (3 bottles) Flying Dog’s Raging Bitch Belgian-Style IPA
• 5 pounds firm-fleshed whitefish (tilapia, pollock, haddock, or cod), cut into 1-ounce strips
• Cornstarch, for dredging

Directions for Bitch Batter and Fish:

1. In a bowl, whisk together the flour, baking powder, salt, cayenne pepper, and Old Bay seasoning.
2. Whisk in the beer until the batter is completely smooth and free of any lumps.
3. Refrigerate for 15 minutes. (Note: The batter can be made up to 1 hour ahead of time.)
4. Heat oil in deep frier or pan to 350 degrees.
5. Lightly dredge fish strips in cornstarch.
6. Working in small batches, dip the fish into batter and immerse into hot oil.
7. When the batter is set, turn the pieces of fish over and cook until golden brown, about 2 minutes.
8. Drain the fish.
9. Serve with malt vinegar.

Directions for Homemade French Fries:

1. Use a mandolin slicer with a wide blade, slice the potatoes with the skin on.
2. Place in a large bowl with cold water.
3. Heat fryer to 320 degrees.
4. Drain potatoes thoroughly, removing any excess water.
5. When oil reaches 320 degrees, submerge the potatoes in the oil.
6. Working in small batches, fry for 2 to 3 minutes until they are pale and floppy.
7. Remove from oil, drain, and cool to room temperature.
8. Increase the temperature of the oil to 375 degrees.
9. Re-immerse fries and cook until crisp and golden brown, about 2 to 3 minutes.
10. Remove and drain on roasting rack.
11. Season with kosher salt.

According to Larry, all must be served with plenty of Raging Bitch.

The entire world is still in shock from the catastrophic earthquake that struck the small nation of Haiti in January. Most of us can only do so much, but Emily Wardrick, a part-time tour guide and bartender at Flying Dog Brewery, is doing much more.

From March 15 through March 24, Emily is traveling to Haiti to volunteer with the His Hands for Haiti organization. “With the unknown outcome of relief efforts, we will be willing to do whatever comes our way,” she said.

This will be Emily’s second trip to Haiti. She first traveled there to volunteer last year, which was when the picture below was taken.

Emily will be staying northeast of Port-Au-Prince, an area that has been receiving little supplies since the quake. Her travel will be provided by Missionary Flights International, which provides mission aviation to Haiti, the Dominican Republic, and the Bahamas.

On behalf of the entire People’s Republic of Flying Dog, we are proud to support Emily, who said, “With the devastation that has taken place in that country and the opportunity that walked into my life to go back, I just have to trust that it is the time for me to return.”

It popped his cherry and certainly aroused us. Cellarman David Kozloski made his dedication to the People’s Republic of Flying Dog official with a wing tattoo on his forearm – just one week old and already looking beautiful. Knowing that he wanted to sport the Gonzo wings for some time, David just needed a little motivation. And by motivation, he means free time.

“My neighbor is a tattoo artist who’s totally into Ralph Steadman’s work. One day, I just said ‘fuck it. I’m free and you’re free,’” he explained of his first tat.

Fuck man, we’re glad you did it.

Memo to the People’s Republic of Flying Dog -

I’m excited to announce that we’ve added a new position to Flying Dog Brewery’s Marketing department. Please welcome Erin Biles, Flying Dog Brewery’s new Marketing Communications Specialist. Although we don’t always introduce new hires on our blog, Erin will be helping out by writing blog entries for us, managing the @flyingdog Twitter account, and responding to consumer inquiries through our website.

I asked Erin about why she was drawn to the Craft Beer industry from her previous job as an Internet Marketing Specialist:

“I’ve always admired the imprint beer has on American culture. Almost everyone can remember cracking open their first beer. And the craft beer industry is a fascinating subculture that has a tremendous amount of passion behind it. I’m so excited to immerse myself in what I consider to be a true art form.”

Just like a lot of other companies, we recognize the best of the best employees at the end of the year.  We just happen to call our top award something a little different: ALPHA BITCH

This isn’t some kind of phony award where the big shots pick the person who kisses the best ass.  Nope. Alpha Bitch is a big deal here at Flying Dog.  All of the Mutts cast a vote and take it super serious.

This year, our Alpha Bitch, as voted by the people is Inventory Specialist, Justin Livengood.

The only downside to Justin winning this award was that he was in Mexico on his honeymoon and wasn’t able to accept the award in person.

So, we’ll do a cyber congrats to Justin for both winning the Alpha Bitch award and getting hitched.

Yes, us Mutts here at Flying Dog are some of the luckiest dogs in the world.  Not only do we work in the great industry (BEER!) but we also work for a great company.
